Pancakes from scratch

This morning I ran out of breakfast food, so I thought. I only had 3 eggs left in the refrigerator and there is 3 of us this morning. However I didn't have any bread or other side items to make a complete meal, so I decided to make pancakes from scratch. They turned out pretty darn good.

Pancakes from scratch
  • 2 cups all-purpose flour
  • 2 1/2 tsp backing powder
  • 4 tbsp sugar
  • 1/2 tsp salt
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tbsp butter (melted)


1. Add all dry ingredients to a bowl and mix.
2. In a different bowl whisk together eggs and milk.
3. Add the eggs and milk mixture to the dry ingredients until smooth.
4. Stir the melted butter into the mixture.
5. Cook and serve.

This mixture made around 7 or 8 pancakes for my family. Which was far more then we needed.

*Tip - If mixture is too thick add a little more milk.

I could never get pancakes right until one day my sister made me some and they were excellent. I asked her how she did it and she told me the trick was to wait patiently before turning, and to have a hot pan. Pour batter into the hot pan and wait till the mix starts to set up and bubble. once it's bubbling all over then it should be time to flip.
